Industrial Cooking of Mussels

It is common, especially for products marketed within the European Union (EU), for mussels to be cooked in an industrial cooker under the so-called 90-90 parameter. This means that in the least favorable area of the cooking vessel, the core of the mussel meat is maintained at 90 degrees Celsius for 90 seconds. This ensures that the heat fully penetrates the bivalve, reaching the internal parts correctly and ensuring that the cooking parameter is met.

During the mussel cooking process, the internal temperature can reach up to 150 degrees Celsius. At this point, a sudden release of pressure occurs to facilitate the opening of the shells and the extraction of the meat.

To ensure durability over multiple campaigns, it is manufactured using the highest quality materials, such as AISI 316 stainless steel and, particularly, SMO 254 stainless steel utilized in the construction of the internal conveyor, which undergoes the most wear and tear during the cooking process. This solution provides superior corrosion resistance against the abrasive elements generated in the cooking of mollusks.

Key features include:

  • Pneumatic systems for opening and closing loading and unloading doors and gates, are designed to facilitate and ensure the entry and exit of mussels, providing continuity to the process.
  • An initial hopper stores the mussels before they enter the internal conveyor, thus maintaining continuous processing even during upstream micro-stoppages in the line.
  • The conveyor is constructed from durable stainless steel to withstand corrosion and high temperatures.

The machine is equipped with a side cyclone responsible for efficiently channeling steam discharges to the outside of the plant, and for decanting liquids or solids carried along in the discharge.

The control system is based on a state-of-the-art industrial PLC. This PLC not only automatically regulates cooking cycles but also allows for reprogramming and communication via Ethernet, facilitating integration with other plant systems and remote troubleshooting. Thanks to its modular design, the size and capacity of the cooker can be adapted to the specific production needs of each client.

Additionally, it allows for the centralization of control for all upstream equipment, enabling the entire initial mussel processing phase and the control of involved equipment to be managed and monitored from this PLC. This optimizes the startup and shutdown times.
